Iron Man-icotti

Avengers Assembly 8 manicotti pasta tubes 4 oz mushrooms, diced 3 oz fresh baby spinach, sliced 1 egg 15 oz ricotta cheese 1/2 tsp coarse grain salt 1/2 tsp garlic powder 1/4 tsp black pepper 1/2 cup shredded mozzarella Marinara sauce Shredded parmesan


1 Drop some manicotti into salted, boiling water and cook according to the box directions. (This recipe is enough for 8 stuffed manicottis but I always make a few extra pieces in case they tear or break during boiling or stuffing.) When done, drain and set aside.

2 Heat a pan over Medium High heat. Add 1-2 Tbs of olive oil to coat the bottom of the pan. Sautee the mushrooms and spinach for 3 mins until they wilt. Remove and set aside to come to room temperature.

3 Beat one egg and mix it into the ricotta cheese. Add the salt, garlic powder, black pepper, and shredded mozzarella cheese and mix everything together. Fold in the room temperature sauteed mushrooms and spinach.

4 Stuff the cheese and veggie mixture into the cooked manicotti. Place the stuffed manicotti into an oven safe dish and cover with foil.

5 Bake for 30 mins at 375 degrees.

6 When done, remove the foil and spoon on some marinara sauce and top with shredded parmesan before serving.
