South Street Seared Chops

Llaves 2 porkchops 1 tsp coarse ground salt 1/2 tsp onion powder 1/2 tsp cumin 1/2 tsp garlic powder 1/2 tsp black pepper vegetable oil 1 lime


1 Make the pork seasoning by mixing the onion powder, cumin, garlic powder, black pepper, and salt. Set aside about 1/2 tsp of this seasoning for later. With the rest of the seasoning, season both sides of the chops.

2 Heat a pan over High Heat. Give it some time to get really hot. Add enough oil to coat the bottom of the pan and then add the pork chops.

For 1 ½-inch or larger (“king cut”) chops, cook 3-4 mins without moving them around so that a nice crusty-sear can develop. Flip the chops and sear the second side for 3-4 mins. To finish them off, turn the heat down to Medium, flip the chops back to the first side, and cook until the internal temperature is 135 degrees (3-5 mins).

For 3/4-inch chops, sear the first side for 3 mins, flip, and then sear the second side for 3-4 mins. Remove when the internal temperature is 135 degrees.

3 When done, remove from the pan and let them rest on a wire rack for 5 mins (temp will come up to 145 degrees). Squeeze the juice of 1/2 a lime over the top and then sprinkle them with the remaining seasoning that you set aside. Slice the remaining 1/2 lime into wedges as a garnish.
