Rogue Squadron Salad Bites

10-12 bites Rebel Alliance 1/4 wedge of Iceberg Lettuce 3-4 strips of bacon (thick cut) 5-6 cherry tomatoes 1/4 cup of blue cheese crumbles Blue Cheese Dressing


1 Cook the bacon and set it aside until it cools. Let me share a quick life-lesson: whenever you’re making bacon – make extra. We both know that you’re going to eat a piece (or two) before you’re done with the recipe.

2 Cut the lettuce into small 1-inch cubes and slice the tomatoes in half. Cut the cooked bacon into 1 to 2-inch strips.

3 With a wooden skewer or toothpick, slowly twist a hole into the bacon, a wedge of lettuce, and then top with a cherry tomato. Sprinkle with Blue Cheese crumbles.

4 Serve with a side of Blue Cheese Dressing for dipping because you can never have too much blue cheese.
