Beaufort Boil
Palmetto Provisions for each 2 people 6 oz Crab Boil 2 lemons 2 ears of corn on the cob 1/2 lb smoked kielbasa 8-10 boiling onions 6-8 petite (or fingerling) potatoes 10-12 shrimp (shell on) 2 Snow Crab clusters Old Bay Seasoning butter
1 Add 1 gallon of water to a large pot. Add the Crab Boil and squeeze in the juice of 1 lemon (drop the squeezed lemon in too). Bring to a boil.
2 Husk the corn and slice into thirds. Cut the smoked kielbasa into 1-2” slices.
3 Add all ingredients except for the shrimp and crab. Boil until the potatoes are tender (15 mins). Add the shrimp and crab and cook until the shrimp turns pink (3 mins). Turn off the heat.
4 Dump 3-4 cups of ice into the pot to bring the temperature of the water down to at least room temperature (this will keep the seafood from overcooking).
5 For medium spicy: let sit for 6-8 mins. For hot and spicy: let everything sit in the Crab Boil for 10-12 mins. For Cajun hot: let it sit for 15-20 mins.
6 Remove all the ingredients from the pot (leave the liquid behind) and place onto a large platter. Give everything a good dusting with Old Bay Seasoning and serve with lemon wedges and butter.
